Every website company has a portfolio page of screenshots. You cannot click a screenshot, and you certainly cannot find out from one whether the booking flow is any good.
The three demo shops don't exist, but the sites do. The cafe takes a real table booking. The salon takes a real deposit with a test card. The tutor sells a real block of lessons. Nothing is charged and no email goes anywhere near a real person.
Go and break them. If something is clumsy, that is exactly what I want to hear before it is your shop.
